Eggplant babaganoush: a delicious seasonal snack instead of store-bought spreads

The idea of making eggplant babaganoush was published on the Instagram page of food blogger mariiam foodblog.

Ingredients:

  • medium eggplant - 3 pcs.
  • garlic - 1 head
  • cream cheese (can be replaced with sour cream or natural yogurt) - 2 tbsp
  • lemon juice
  • spices: salt, pepper, smoked paprika, a little cumin

Method of preparation:

1. Bake the eggplant at 220 degrees for 30 minutes.

2. Cool and wrap in cling film.

3. Cut off the tip of the eggplant and squeeze out the core.

4. Blend it with a blender or mash it with a fork.

5. Add the baked garlic, cream cheese, lemon juice, and spices.

6. Serve with croutons.
