If someone thought that lasagna could only be made with meat, they were wrong. There is an equally delicious and light version – lasagna with vegetables. This dish will fit perfectly into your diet and quickly become a favorite. Moreover, it takes just 30 minutes to prepare. What could be better?

Ingredients:
- Lasagna sheets - 10 pcs.
- Minced meat - 350 g
- Hard cheese - 60 g
- Red onion
- Eggplant - 1 pc
- Zucchini - 1 pc
- Garlic to taste
- Sun-dried tomato paste
- Cilantro
- Coconut cream
- Butter (to anoint the mold and baking sheets)
- Ghee (for frying minced meat and vegetables)
- Olive oil for the sauce - 2 tbsp.
- Spices
Ingredients and process of making lasagna
Method of preparation:
- You should get 4 layers of lasagna in total. For the bottom two layers, use 3 boiled sheets each.
- Fry the minced meat with chopped vegetables: onion, garlic, zucchini and eggplant.
- Mix chopped herbs and tomatoes with the resulting mass.
- Spread each layer with tomato paste first, then put the minced meat and vegetables. Season it with salt and sprinkle with cheese. Repeat the steps until you run out of ingredients.
- After assembling the lasagna, pour the cream sauce over the lasagna and sprinkle it with cheese.
- Bake at 180 degrees until tender.
