A summer dish with the taste of childhood is definitely dumplings, especially berry and cottage cheese dumplings. You can learn to cook them very easily and quickly, even if you have never made them before.

Steamed dumplings with kefir

Homemade dumplings with potatoes and cheese

Ingredients:

  • kefir - 250 ml
  • flour - 350-400 g
  • eggs - 1 pc.
  • salt - 10 g
  • soda - 10 g
  • sugar - 1 tsp.

filling:

  • potatoes - 3 pcs.
  • onions - 1 pc.
  • vegetable oil - 3 tbsp.
  • salt, pepper - to taste

Method of preparation:

  1. In a large bowl, mix the kefir, sugar, salt, baking soda and egg, stir well.
  2. Gently add the flour and mix. Take it out of the bowl and continue kneading with your hands, it should be soft and elastic. Then put it back into the bowl, cover with a towel and let it rise.
  3. <b>For the filling:</b> chop the onion, fry well in vegetable oil and add to the boiled potatoes, mix well, salt and pepper.
  4. Divide the dough into equal parts and roll it out, dip your hands in flour and form dumplings, add potato filling to each.
  5. For steaming, make the following construction: take a pan with a wide top, pour one-third of the water into it and stretch the cheesecloth around the edge so that it sags slightly without touching the water and holds tightly.
  6. Cover the pot with a lid and bring the water to a boil. When the water boils, the cheesecloth will become damp, which is normal. Put the finished dumplings in and remove as soon as they increase in size.

Serve with butter and sour cream.

How to cook homemade dumplings

Ingredients:

  • flour - 300 g
  • eggs - 1 pc.
  • baking powder - 10 g
  • carrots - 3-4 pcs.
  • salt, pepper - to taste
  • milk - 100 ml
  • turmeric - 10-20 g
  • raisins - 30 g
  • cinnamon - 10 g

Method of preparation:

  1. Mix flour, baking powder, turmeric, salt. Add egg, sugar and milk, mix well. Knead the dough and let it stand for about 20 minutes.
  2. Pour boiling water over the raisins and let them brew to increase in size.
  3. Grate the carrots on a coarse grater, add to the dough along with the raisins and cinnamon, and mix well.
  4. Divide the dough into equal pieces and throw into boiling water, cook until tender.

Serve with jam and sour cream.

Dumplings in the oven with milk

You can make your own dumplings in advance of any kind you like or buy ready-made dumplings.

Method of preparation:

  1. Put the dumplings in a baking dish, pre-grease it with butter.
  2. Pour milk over everything, add spices, salt and a pinch of nutmeg to spice things up.
  3. Add grated hard cheese on top and bake for 30 minutes at 200 C.

Serve with cocoa or hot tea, it will be delicious.
