Dietary and low-calorie khachapuri: what dough to use
Traditional Georgian khachapuri is made from yeast dough. However, if you want to make the dish more dietary and low-calorie, you should prefer a different base and make it from cottage cheese.
Food blogger Anastasiia (healthydemure) shared a recipe for diet khachapuri made from cottage cheese dough on her Instagram page.
Ingredients:
- cottage cheese – 200 g
- eggs – 2 pcs
- yolk – 1 pc
- flour – 4 tbsp
- baking powder – 1\2 tsp
- hard cheese – 100 g
- salt
Method of preparation:
1. Let's start by making the dough. To do this, mix cottage cheese with an egg and one egg white. Keep the yolks to add them on top of the khachapuri at the end of cooking.
2. Add flour and baking powder to the resulting mass. Mix well.
3. Divide the finished dough into two parts and form boats. Place on a baking sheet covered with parchment.
4. Bake at 180 degrees for 10 minutes.
5. Meanwhile, prepare the filling, namely grate the cheese.
6. When the boats are baked, take them out of the oven and put grated cheese inside each one. Put them back in the oven and bake for 10 minutes at 180 degrees.
7. 2 minutes before cooking, put the yolk inside each boat (you will need to prepare a place for it by making a depression inside the cheese).
