Delicious pancakes with meringue: they always turn out thin

Perfect pancakes are thin, golden, and very tender. It can be both a dessert and a full meal, depending on what filling you choose. You can also add a delicious airy meringue. This is the case when traditional homemade pancakes turn into a real restaurant dish.

The idea of making thin pancakes with meringue was published on the Instagram page of food blogger Lyuba Bondarchuk (lyuba.bondd.life).

Ingredients:

  • eggs - 2 pcs.
  • sugar - 80 grams (30 grams for the dough, 50 grams for the meringue)
  • a pinch of salt
  • baking soda - 0.5 tsp
  • flour - 2 cups
  • milk - 2 cups
  • vegetable oil - 1 tbsp

Method of preparation:

1. Beat 2 eggs, separating 1 white (leave it for the meringue).

2. Add sugar to the eggs and mix.

3. Add flour, salt, baking soda, milk and oil, mix well to avoid lumps.

4. Bake the pancakes.

5. To make the meringue: mix the egg whites with sugar and put them on low heat.

6. Stir constantly until the sugar is dissolved.

7. Then whisk until white fluffy mass – meringue.

8. Roll the pancakes into rolls.

9. Put the meringue on and bake it (you can use a gas burner, but if not, you can use the oven on grill mode).

10. Garnish to taste: berries, nuts, caramelized apples, mint.
