Juicy seasonal eggplants can be used to make a hearty and budget-friendly lunch. All you need is regular minced meat and a lot of grated cheese. All of this is baked in the oven, and you get a great meal for the whole family.

Ingredients:

  • eggplant
  • minced meat (whatever you like, in this recipe, it is pork)
  • onion
  • garlic
  • tomato paste
  • tomato
  • mozzarella cheese
  • olive oil
  • spices and seasonings (salt, pepper, paprika, oregano, cumin, rosemary)

Method of preparation:

1. Cut the eggplant into 0.5-centimeter slices lengthwise, season with salt, leave for 15-20 minutes, and pat dry with paper towels.

2. Put on a baking sheet covered with parchment.

3. Brush both sides with olive oil and bake at 200 degrees for 15 minutes.

4. Cut the onion into small cubes, fry for 2-3 minutes, add garlic, and fry until transparent.

5. Add the minced meat to the onion, fry for 3-4 minutes, add spices, seasonings, and tomato paste and fry for another 2 minutes.

6. Grate the tomato on a coarse grater, add to the pan with the minced meat, and simmer for 7-8 minutes.

7. Put the eggplants in a baking dish, then the minced meat, then the eggplants, and then the minced meat (2-3 layers).

8. The minced meat should be the last layer. Add grated mozzarella on top.

9. Mix tomato paste with water.

10. Pour over the eggplant, add a few sprigs of cumin, garnish with tomato slices and bake at 190 degrees for 20 minutes.
