Delicate cheesecake with peaches: no baking required

Summer is a time for simple and delicious desserts. For example, a fruit cheesecake that doesn't even need to be baked. The curd mass hardens perfectly in the refrigerator, and juicy peaches with jelly are topped with it.

The idea of making an airy cheesecake without baking with fruit was published on the Instagram page of food blogger Anna (anny.cooking).

Ingredients:

  • coffee biscuits - 300 g
  • butter - 150 g
  • cream cheese - 500 g
  • fatty cream 33-36% - 250 g
  • gelatin - 20 g + 100 ml of water
  • powdered sugar - 120 g
  • vanilla sugar - 10 g
  • peaches or nectarines - 3 pcs.
  • peach jelly - 1 pack

Method of preparation:

1. Cover the form with parchment and grease the walls with a drop of oil.

2. Grind the biscuits, combine them with melted butter, put them in the mold, and make a cake, pressing the biscuits firmly to the walls and bottom of the mold with small sides of 2-2.5 cm.

3. Pour gelatin with water and leave for 10 minutes to swell.

4. Then melt the gelatin in a water bath or in the microwave for 20 seconds.

5. Remove, stir, and heat a little more if necessary.

6. Combine the cottage cheese, and powdered sugar, and beat with a mixer for 1 minute.

7. Add cream, beat for another minute, add melted gelatin, beat until smooth.

8. Put the curd mass on the crust, smooth it out, and put it in the refrigerator.

9. Prepare peach jelly according to the instructions on the package, and cool to room temperature.

10. Slice the peaches, put them on top of the curd mass, pour 5-6 tbsp of jelly, and put them in the refrigerator for 15 minutes.

11. Remove and pour the rest of the jelly. To prevent leakage, you can put the cheesecake mold on a flat plate and take the cheesecake by the plate, not by the mold.

12. Put in the refrigerator until the jelly is set.

13. You can remove the mold as follows: blow a hairdryer on the walls, or put a hot towel against the mold.
