Cupcakes are a variant of an elementary dessert for tea. And to make the dough moderately sweet and fluffy, it is worth making it from carrots. The mass turns out to be very tender and is made from fairly budgetary ingredients.

The idea of healthy carrot muffins was published on the Instagram page of food blogger Nina Tkach (ninatkachseniak).

Ingredients:

  • 80 grams of raw carrots
  • 2 eggs
  • 65 grams of whole wheat flour
  • 1-2 g of baking powder
  • 1 tbsp of Greek yogurt (or thick sour cream)

Cooking method:

1. Beat carrots and eggs in a blender.

2. Add the flour and baking powder. The dough will have the consistency of thick sour cream.

3. Pour into silicone molds and bake at 160 degrees for 25 minutes.

4. Sprinkle with chopped sunflower seeds or pumpkin seeds. If you want a sweeter taste, you can add raisins (whole or chopped) along with carrots.
