Crispy eggplant instead of French fries: how to make a savory appetizer

Instead of classic potatoes, you can make fried eggplants. This is the season for such vegetables, so they are fresh and juicy. You just need to add a spicy dressing and fry everything.

The idea of cooking crispy eggplants with dressing was published on the Instagram page of food blogger Olha Riabenko (olga_riabenko_). It can be served with sauce.

Ingredients:

  • eggplants – 3 pcs
  • salt, pepper
  • starch – 3 tbsp with a slide
  • oil for frying

Ingredients for the dressing:

  • cilantro or parsley
  • green onions
  • garlic – 1-2 cloves
  • paprika – 2 tbsp
  • sweet pepper – 1 pc
  • soy sauce – 2-3 tbsp
  • wine vinegar (lemon juice) – 1 tbsp
  • vegetable oil – 4 tbsp
  • sesame seeds – 1 tsp
  • sugar (honey) – 4 tsp

Method of preparation:

1. Peel the eggplant and cut it into slices.

2. Put it into a slider bag.

3. Add salt and pepper.

4. Close the lock, mix thoroughly, and leave for 15 minutes.

5. For the dressing, cut the sweet pepper into thin strips.

6. Chop the cilantro, onion and garlic.

7. Mix all together in a bowl with the spices.

8. Cover with plastic wrap.

9. Open the lock and squeeze out all the liquid from the eggplant.

10. Pour the starch into the bag with the eggplant, close the zipper, and mix thoroughly.

11. Pour 2-3 cm of oil into a frying pan. Heat well and fry the eggplant until golden brown.

12. Put on parchment to remove excess fat.

13. Add the dressing to the eggplant and mix.
