Crispy eggplant: how to make a delicious appetizer

When the eggplant season begins, many different dishes appear on the table. One of the most popular is the eggplant appetizer, which will taste great in hot weather.

Food blogger Olha Riabenko shared on Instagram how to make crispy eggplants that will be the perfect appetizer. Once you try it, you will want to cook it again and again.

Ingredients

  • Eggplant – 3 pcs
  • Salt
  • Pepper
  • Starch – 3 tbsp
  • Oil

Ingredients for the dressing

  • Cilantro or parsley
  • Green onions
  • Garlic – 1-2 cloves
  • Paprika – 2 tbsp
  • Sweet pepper – 1 pc
  • Soy sauce – 2-3 tbsp
  • Wine vinegar – 1 tbsp
  • Oil – 4 tbsp
  • Sesame seeds – 1 tsp
  • Sugar or honey – 4 tsp

Method of preparation

1. Peel the eggplant and cut it into slices.

2. Put them in a slider bag, add salt and pepper. Close the lock, mix thoroughly, and leave for 15 minutes.

3. Prepare the dressing. Cut the bell pepper into thin strips.

4. Chop the cilantro, onion and garlic.

5. Mix everything in a bowl with the spices and cover with plastic wrap.

6. Open the lock and squeeze out all the liquid from the eggplant.

7. Pour the starch into the bag with the eggplant, close the zipper, and mix everything thoroughly.

8. Pour 2-3 cm of oil into the frying pan. Heat well and fry the eggplant until golden brown.

9. Put it on parchment to remove excess fat.

10. Add the dressing to the eggplant and mix.
