Crispy biscuit with apricots: how to make the dough

Apricots are a great base for basic sweet pastries. With these fruits, the pies will be very flavorful and juicy. Crispy dough goes especially well with apricot filling.

The idea of making a sweet biscuit with apricots was published on the Instagram page of Yulia Taniushina (tanyushina).

Ingredients for 2 biscuits:

  • butter - 170 g
  • sour cream - 170 g
  • powdered sugar - 40 g
  • baking powder - 1 tsp
  • flour - 360 g

Ingredients for the filling:

  • apricots - 1 kg
  • starch - 2 tbsp
  • sugar - 3-5 tbsp of sugar

Ingredients for decorating:

  • eggs
  • almond petals

Method of preparation:

1. Mix flour, powder, salt, baking powder.

2. Cold butter grate directly into the flour, and mix.

3. Add sour cream and start kneading the dough quickly.

4. As soon as it comes together into a homogeneous mass, it's ready. No need to knead for a long time.

5. Divide the dough into 2 parts, wrap in plastic wrap, and refrigerate for an hour or more.

6. Meanwhile, prepare the filling: cut the apricots into small slices, and mix with sugar and starch.

7. Roll out the chilled dough into a 30 cm diameter circle on parchment paper.

8. Put half of the apricots in the center. Using paper, roll the edges of the dough to the center to form a biscuit.

9. Brush the edges of the dough with egg, and sprinkle with almond petals or sugar.

10. Bake for 20-25 minutes at 200 degrees until golden brown.

11. Thus, make a second biscuit from the second half of the dough.

12. Cut the biscuit when it is completely cool.
