Homemade brushwood cookies made by your mother or grandmother tastes better than any other cookies. But only if they are crispy and low-fat. To achieve the desired effect, use the following technique.

Ingredients:
- 400 g of flour
- 200 ml of kefir
- 1 egg
- 2 tbsp of sugar (30 g)
- a sachet of vanilla sugar (optional)
- 1/2 tsp of baking soda
- 30 g of butter
- 1 tbsp of alcohol (vodka, rum, cognac)
- a pinch of salt
- 500 ml of oil for frying
- powdered sugar for sprinkling

1. All ingredients should be at room temperature. First, add a pinch of salt, sugar and vanilla sugar to the egg and beat lightly with a whisk. Add kefir and baking soda. The mass will begin to foam and it should be so as it is kefir reacting with the baking soda.
2. Add melted butter, alcohol, mix well and gradually add sifted flour.
3. Knead the dough first with a spatula and then with your hands for 5-7 minutes until soft and elastic.

4. Transfer it to a bowl, cover and leave to rest at room temperature for 20-30 minutes.
5. After that, divide the dough into 2 parts and roll each into a circle up to 5 mm.

6. Cut into 2-3 cm wide strips, and cut each strip into 9-10 cm long diamonds.

7. Make an incision in the middle of each diamond and form cookies by pulling one end of the dough through the incision.

8. Heat the oil in a heavy-bottomed pan and fry the products on each side until golden brown. Remove and place on a paper towel to absorb excess fat.
9. When they have cooled, sprinkle with powder.
