Creamy pumpkin soup for a hearty lunch: sharing the right cooking technology
Pumpkin is the healthiest autumn vegetable that can be used to make delicious and satisfying dishes, from soups to casseroles, pies and drinks.
Cook Polina shared on Instagram a recipe for a delicious, healthy pumpkin cream soup with cream, garlic, and chili peppers.
Ingredients:
- pumpkin - 400-500 g
- butter - 15 g
- garlic - 3 cloves.
- chili - 2-3 pieces
- onion - 1 pc.
- cream - 100 ml
- hot water - 200 ml
- salt, Provencal herbs - to taste
Method of preparation:
1. Melt the butter in a saucepan, add the garlic and fry for 1-2 minutes, then add the onion and fry until golden brown.
2. Add the chili pepper and Provencal herbs, then add the chopped pumpkin, stir and add the hot water. Cook over medium heat for 10 minutes.
3. Add the cream, heat for another 3-4 minutes and remove from the heat.
4. Next, blend everything in a blender until smooth.
Serve the soup with fried ham or bacon, and it will also be delicious with shrimp and crackers!
