Cream of tomato soup with croutons for a light dinner
Tomatoes are not only healthy vegetables that are often the basis for salads, but they can also be used to make delicious soups, both cold and hot. They are also pickled, stuffed, and used to make sauces and snacks.
Cook Anastasiia (anny.cooking) shared on Instagram a recipe for a delicious, spicy creamy tomato soup with peppers and Parmesan for a light dinner.
Ingredients:
- ready-made broth – 250-300 ml
- ripe sweet tomatoes – 3 pcs
- garlic – 3 cloves
- bell pepper – 1 pc
- purple onions/onions/leeks – 250-300 g
- olive oil – 1 tbsp
- salt, pepper, oregano – to taste
Optional:
- Parmesan cheese
- fried bacon
- fresh basil
- fried bread
Method of preparation:
1. Wash, peel, chop the vegetables, put them in a bowl, drizzle with olive oil, and salt, add oregano, transfer to a baking sheet, and bake at 200 degrees for 40 minutes.
2. Be sure to cool the vegetables, remove the skin from the tomatoes and peppers, add the prepared broth, and blend everything in a blender until smooth.
3. Pour the prepared mixture into a saucepan and bring to a boil, season with salt and pepper if desired.
4. Pour the soup into a bowl and serve with toasted bread, bacon, and cheese.
