How to cook bograch

In simple terms, bograch is a kind of Hungarian goulash. It is a very tasty, thick and rich soup. It used to be cooked only in a cauldron outdoors. But times have changed, and any recipe can be adapted to suit your needs.

Famous chef Serhiy Pokanevych shared a recipe for real bograch on Instagram.

Recipe.

Ingredients:

  • beef - 500 g
  • pork ribs - 1 kg
  • smoked lard - 100 g
  • potatoes - 1 kg
  • bell pepper - 1 pc
  • red onion - 1 pc
  • onion - 1 pc
  • water - 2 liters
  • dry red wine - 120 ml
  • tomatoes - 2 pcs
  • hot capsicum - to taste
  • ground pepper - a pinch
  • salt - 4 pinches
Ingredients.

Method of preparation:

  1. Cut the meat.
  2. Fry the lard and add the meat to it. Season with salt and pepper. Simmer under the lid for about 1.5 hours.
  3. Chop the vegetables. Add them to the smoked meats. Pour a little water and simmer for 1 hour.
  4. Add the garlic and tomato 10 minutes before it is ready.
  5. At the very end, add the herbs and pour in the wine.
