Better than okroshka: spicy strawberry gazpacho with garlic and cucumbers according to Volodymyr Yaroslavskyi's recipe
Strawberries are the perfect berry for making summertime, refreshing dishes, such as ice cream, smoothies, lemonade, and kvass, as well as delicious jam and pies. But you can experiment a bit and make a completely unusual, but delicious, refreshing, summer dish out of it – gazpacho.
Chef Volodymyr Yaroslavskyi shared a recipe for a spicy summer gazpacho with strawberries, bread, and garlic on Instagram.
Cook's tip: All ingredients for the soup should be cool. In addition, the finished gazpacho should be placed in a cold place and served cold.
Ingredients:
- cucumbers without skin – 100 g
- tomatoes without skin – 250 g
- strawberries – 220 g
- peeled bell pepper – 70 g
- fresh garlic – 5 g
- salt – 3 g
- olive oil – 20-25 g
- white bread flesh – 50 g
Method of preparation:
1. Peel the cucumbers, tomatoes and peppers.
3. Slice the tomatoes and cover them with boiling water for 25 seconds, then the skin can be easily removed.
3. Wash and hull the strawberries.
4. Put the strawberries, garlic, olive oil, salt, bread crumbs into a blender and blend until smooth.
Serve the finished dish cold, you can serve it with ice, adding olive oil, and you can also garnish it with basil, microgreen or just eat it with fresh bread, it will be delicious!
