Clear jelly desserts are very popular nowadays. You can choose any of your favorite fruits or berries and fill them with this mass - it will be very elegant and aesthetically pleasing. And most importantly, you don't have to bake anything.
The idea of making a light jelly cake with berries and fruit without baking was published on the Instagram page of food blogger Natalia with the nickname nata.cooking. For the summer, this is exactly what you need.

Ingredients for the base:
- biscuits - 200 g
- cocoa - 1 tbsp
- butter - 70 g
Ingredients for the cheese layer:
- cream cheese - 600 g
- powdered sugar - 100-125 g
- vanilla sugar - 8 g
- 33% cream - 200 ml.
- zest of one lime
- gelatin - 15 g + 75 ml of water
Ingredients for the berry and jelly layer:
- transparent jelly - 1 pack
- berries/fruits - to taste

1. For the base, crush the cookies into crumbs.
2. Add melted butter, cocoa.
3. Mix and put into the mold.

4. Form the bottom and refrigerate.
5. For the cheese layer, pour gelatin with cold water and set aside to swell.
6. Then melt it to a liquid state, but do not boil.

7. Combine cream cheese, powdered sugar, vanilla sugar, cream, lime zest and beat with a blender for 2-3 minutes until smooth.
8. Add the melted gelatin and mix again.

9. Pour into the mold on the base and refrigerate until it hardens for 1-2 hours.
10. For the last layer, take the crystal-clear jelly, pour boiling water over it, mix and cool to room temperature.

11. Put berries/fruits on the frozen cheesecake.
12. Pour the jelly to the middle of the berries, put in the freezer for 15 minutes.

13. Then pour in the remaining jelly and refrigerate for 3-5 hours until completely set.
