Better than charlotte: what dough to choose for a delicious apple pie
A traditional pie made with apples is charlotte. The dough has a delicate texture and the filling is juicy. But if you like crispy pastries, the best option would be to make an apple pie with shortcrust pastry. The technology is extremely simple.
The idea of making a sweet shortcrust apple pie was published on the Instagram page of Sofia Martyniuk (sofia_martinuk).
Ingredients for the dough:
- flour - 400 g
- sugar - 20-40 g
- butter (or margarine) - 180 g
- eggs -1 pc
- sour cream - 2 tbsp (can be replaced with mayonnaise)
- baking powder - 1 tsp or baking soda - 0.5 tsp
- vanilla sugar
Ingredients for the apple filling:
- apples - 4 pcs
- cinnamon, sugar, lemon juice, butter.
Method of preparation of the filling:
1. Peel the apples, remove the core, and cut into cubes.
2. Add a little butter to the frying pan and stew the apples.
3. Stirring occasionally, add cinnamon and sugar (if the apples are sweet, you can leave out the sugar).
4. Caramelize the apples for a few more minutes, stirring constantly.
5. Leave to cool.
Method of making the dough:
1. Add baking powder and grated butter to sifted flour.
2. Rub into crumbs.
3. Beat egg with sugar and vanilla sugar with a whisk until white and add sour cream.
4. Add the prepared liquid to the crumbs and knead the dough.
5. Divide the dough into 1 large and 1 small part.
6. Put the smaller part in the refrigerator for 20 minutes.
7. Put the larger part in a baking dish covered with parchment and smooth it out with a glass.
8. Make sides.
9. Pour the apple filling inside.
10. Make strips from the smaller part of the dough and put on top of the apples. Decorate as desired.
11. Bake at 180 degrees for 20-25 minutes until golden brown.
12. Cool slightly and garnish with powdered sugar.
