Beetroot roll with herring for a snack and a festive table: a recipe for a light dish
Beets can be used to make not only salads, but also appetizers, sauces, spreads, sandwiches, and even baked goods. It can also be used as a base for biscuits.
The cook shared on Instagram a recipe for a delicious appetizer roll made from beetroot sponge cake, with herring and mustard.
Ingredients:
- boiled beets – 250 g (grated)
- eggs – 3 pcs.
- flour – 80 g
- salt – 1/2 tsp
- ground black pepper
- vegetable oil – 1 tbsp.
For the filling:
- herring – 200-250 g (fillet)
- cream cheese (Philadelphia) – 300 g
- mustard in grains – 3-4 tsp.
- green onions – a bunch
Method of preparation:
1️. Grate the boiled beets on a fine grater and put them in a bowl.
2️. Carefully separate the whites from the yolks. Whisk the whites until stiff and fluffy. Add the yolks, flour, and oil to the grated beets and mix.
3. Add the beetroot dough to the beaten egg whites in 2 stages and mix with a spatula until smooth.
4. Put the beetroot dough on the parchment, smooth it out, and cook in a preheated 180-190 degree oven for about 12-15 minutes. Cool the finished roll for 10 minutes.
5. Put the sponge cake on the cling film, remove the parchment, put the cream cheese, and brush it evenly with the cheese.
6. Place the halved herring on one edge and the mustard on top. Finely chop the chopped green onions, sprinkle on top, and wrap the roll tightly, put in cling film, and refrigerate for at least an hour.
