Banana cake

300 g of banana

100 g of cane (brown) sugar (4 tbsp)

100 g of butter (82% fat)

80 ml of milk (5 tbsp + 1 tsp)

100 g of eggs (2 pcs.)

200 g flour (6.5 tbsp)

6 g of baking powder (2 tsp)

1 g salt (1/5 tsp)

vanilla sugar

Caramel sauce

100 g sugar (4 tbsp)

vanilla or vanilla sugar

220 ml of cream (30-35% fat)

2 g salt (2/5 tsp)

30 g of butter (82% fat)

Preparation:

- It is better to use very ripe bananas for this cake. Put the bananas in a large bowl and use a fork to mash them with small pieces of bananas. Add brown and vanilla sugar. Mix well.

- Add the eggs, milk, and melted butter, and mix again.

- Combine flour, baking powder, and salt in a bowl and add to the banana mixture. Mix the batter thoroughly with a whisk to avoid lumps.

- Prepare a baking dish, in this recipe it is rectangular, 25x18 cm in size. Take the mold, grease it with butter and put parchment on the bottom.

- Pour the batter into the mold and smooth it out.

- Put it in a preheated oven to 180 degrees with convection for about 30-35 minutes. Check for doneness with a toothpick. Now let's proceed to the caramel sauce.

- Prepare the dry caramel. Put a saucepan on the stove and pour sugar into it. Wait until it turns into caramel.

- Heat the cream in the microwave or in a saucepan on the stove until it is steaming.

- Stir the sugar with a heat-resistant spatula. You should get a beautiful, brown caramel.

- Reduce the temperature and gradually pour in the hot cream, stirring constantly with a spatula. Remove the saucepan from the stove.

- Add salt and butter. Stir to combine.

- The caramel sauce is ready.

- Take out the cake. While it's still hot, take a wooden skewer or sushi sticks and pierce every 1-2 cm.

- Pour the warm caramel sauce over the hot cake. Leave it at room temperature for 1 hour so that it is well soaked.

- Take the roasted walnuts, sprinkle them over the cake, cut into pieces, and enjoy.

Enjoy!
