Transcarpathian cuisine is hearty and delicious. Many people go to the Carpathians to taste the local national dishes. However, you can also cook traditional masterpieces from the area at home. One of these dishes is cabbage rolls.
The idea of cooking traditional Transcarpathian cabbage rolls was shared by mashka_salei on her Instagram page. They are very juicy, hearty and flavorful.
Ingredients for the filling.
Ingredients :
- rice - 500 g
- coarse corn grits
- minced meat - 300 g
- lard - 2 tbsp
- onions - 1 pc
- carrot - 1 pc
- dill
- sweet red paprika
- oil for frying
- salt, pepper - to taste
- pork - 700 g
- sauerkraut - 3 small pieces (if fresh, steam)
Cabbage rolls with meat.
Method of preparation:
- Fry onions and carrots.
- Add minced meat and cracklings, salt, pepper, paprika and dill.
- Fry everything and add to the rice and corn grits.
- Stir and form cabbage rolls.
- Cover the bottom of the pot with a few leaves of cabbage and put the rolls in layers together with the pork.
- Cover with a plate slightly smaller than the pot.
- Pour water to cover the cabbage rolls by 5-8 centimeters.
- If using sauerkraut, cook for 1-1.30 hours.
- If using fresh cabbage, you will need a little less than 40 minutes.
- Serve with sour cream.
