A sign of a successful sponge cake is its fluffy and airy texture. It is not always possible to make such pastries perfectly. The dough settles and turns out to be clogged. But if you use the following technique, the result will amaze you.

The idea of making the perfect sponge cake was published on the Instagram page of food blogger Vasylyna Halyn (lyna_pets). Cakes made from this dough will be a great base for your favorite desserts.

Ingredients:

  • eggs - 6 pcs.
  • a pinch of salt
  • sugar - 180 ml
  • flour - 160 g
  • baking powder - 1 tsp.
  • potato starch - 2 tbsp.

Method of preparation:

1. Cover the split mold with parchment only on the bottom, cut off the excess parchment.

2. Turn on the oven to 180 degrees.

3. While the oven is heating, make the dough.

4. Beat the eggs with sugar and salt with a mixer.

5. Add the sifted flour, baking powder, and starch a little at a time.

6. Gently stir with a spatula in a vertical motion.

7. Pour the loose mass into the mold.

8. Place in the preheated oven (top-down position, without the hood).

9. Bake at 180 degrees for about 30-35 minutes. Do not open the oven for the first 20 minutes.

10. Check the readiness with a toothpick.

11. Leave the sponge cake in the oven until it cools.

12. Cut the cooled sponge cake into 3 cakes. It is also very convenient to freeze it.
