Summer is, of course, associated with picnics, barbecues, delicious vegetables, well-cooked fish and meat. You know for sure that grilled food is much healthier than boiled or fried.

1. Grilled nectarine salad

Ingredients:

  • nectarine – 1 pc
  • arugula – 100 g
  • walnuts – 20 g
  • goat cheese – 50 g
  • olive oil – 1 tbsp
  • maple syrup – 1 tbsp
  • balsamic vinegar – 2 tbsp
  • salt, pepper – to taste

Method of preparation:

  1. Cut the nectarine, brush with vegetable oil, and send it to bake on a wire rack. Roast until the nectarine is browned, but make sure it does not burn.
  2. Put the arugula, nectarine, and cheese on a plate, add the nuts, and pour over the prepared sauce, salt and pepper to taste.

For the sauce: mix olive oil, maple syrup, and balsamic vinegar.

2. Baked eggplant with cucumber sauce

Ingredients:

  • eggplant – 4-5 pcs
  • cumin – 10 g
  • paprika – 1 tsp
  • olive oil – 100 ml
  • juice of one lime
  • salt, pepper – to taste

For the sauce:

  • yogurt – 100 ml
  • turmeric – 10 g
  • fresh cucumber – 1 pc
  • lime juice – 2-3 tbsp
  • parsley – a few sprigs

Method of preparation:

  1. Wash the eggplants well, cut into layers, salt, and pepper, add oil, paprika, lime juice, and cumin. Mix everything well.
  2. Put them on a wire rack to bake, fry them well, but make sure they don't burn.
  3. Make the sauce: add chopped cucumber, parsley, lime juice, salt to taste, and turmeric to the yogurt.

You can serve the eggplant with any vegetables and cucumber sauce.

3. Salmon teriyaki with cinnamon

Ingredients:

  • salmon – 500 g
  • vegetables - asparagus, zucchini, eggplant, pepper – to your taste
  • ginger – 20-40 g
  • garlic – 2-4 cloves
  • olive oil – 80 ml
  • sugar – 2-3 tbsp
  • salt – 10 g
  • chili pepper – 10 g
  • lemon – 1 pc
  • cinnamon – 1 tsp
  • corn flour – 1 tbsp
  • green onions – a bunch
  • pineapple – 50 g
  • water – 50-70 ml

Method of preparation:

  1. First, you need to make a marinade for salmon: pour soy sauce into a cast-iron skillet, add sugar, salt, pineapple, cinnamon, garlic, ginger, pepper, and 60 ml of water. Whisk well.
  2. Put on the fire and bring to a boil, let it simmer for 5 minutes until all the sugar is dissolved and the sauce thickens.
  3. Pass the sauce through a sieve to remove all solids and let it cool completely.
  4. Place the salmon in a deep baking sheet, pour the cooled sauce over the fish, and leave to marinate for at least an hour, but preferably overnight.
  5. Also make a marinade for the vegetables: mix the oil, chili pepper, ginger, garlic, and lemon. Put on low heat and cook for 30 minutes, stirring constantly.
  6. Pour the prepared sauce into the vegetables and mix well, put them on the grill to bake, bake for about 2-3 minutes, constantly turning them over so that they do not burn.
  7. Before baking, wrap the salmon in foil and put it on the grill for 10-15 minutes, turning it over every 5 minutes to prevent it from burning.
  8. Make a sauce from corn flour and water, whisk these two ingredients well, and cook until thick.

Serve the cooked salmon with vegetables best with rice and couscous.
