Canned zucchini is the most popular and versatile. For example, winter zucchini salads that are suitable for any side dish and are also quite tasty on their own. One of them is a spicy salad with zucchini and bell peppers in tomato sauce. But the most important thing here is to keep track of the cooking time so that the vegetables do not boil, keep their shape and remain moderately crispy.

Recipe for zucchini salad in tomato sauce

Ingredients:

  • zucchini - 3 kg
  • garlic - 2 heads
  • salt - 2 tbsp
  • tomato sauce\ketcha - 970 g
  • sugar - 200 g
  • sunflower oil - 200 ml
  • vinegar - 150 ml
  • bell pepper - 4 pcs
  • red paprika - 1 pc
Preservation of zucchini

Method of preparation:

1. Zucchini cut into rings.

2. Pepper and paprika peel and cut into strips.

3. Mix all the chopped vegetables. Add sugar, salt, oil, vinegar and sauce. Put on the fire to simmer. After boiling, stir and cook for 30 minutes over low heat.

4. After 30 minutes, stir in the zucchini again. Squeeze the garlic into the vegetables. Cook for another 20 minutes.

5. Sterilize the jars and lids during this time.

6. Put the prepared zucchini into the jars and close them with a key.
