Zucchini roll with a delicious filling: recipe for a budget festive dish

Zucchini can be used to make a lot of delicious and budget-friendly dishes, from stews and pancakes to caviar, soups and casseroles. They can also be stewed, fried, and baked.

A cook shared a recipe for a delicious and easy-to-prepare zucchini roll with a delicious filling on Instagram.

Ingredients:

  • 2 zucchini (550 g)
  • 0.5 tsp of salt
  • 3 eggs
  • 2 tbsp. sour cream or white yogurt
  • salt and spices to taste
  • 3 tbsp. flour

For the filling:

  • 200 g. cream cheese
  • 1-2 cucumbers
  • 180 g. red fish

Method of preparation:

1. Grate the zucchini.

2. Break the eggs into a separate bowl, add salt, spices, and sour cream and mix well.

3. Squeeze the vegetable from the excess juice and add it to the egg and sour cream mixture. Mix. Add flour and stir.

4. Pour the dough onto a baking sheet covered with parchment and use a spatula to smooth it into a thin layer. Bake at 200  for 15-25 minutes.

5. Chill the finished base, brush with cream cheese, put the filling, carefully roll up and wrap in parchment. Put it in the refrigerator for 1 hour.
