Zucchini is a unique product, and besides being very healthy, it can also be used to make a lot of delicious dishes, from mint and zucchini pancakes to ratatouille, pancakes, stews, and delicious pies. Caviar, lecho, simply canned zucchini with garlic, and even kebabs will also be incomparable.

Zucchini for pancakes are best taken young

Ingredients:

  • zucchini – 2-3 pcs.
  • minced meat – 400 g
  • flour – 50 g
  • egg – 1 pc.
  • garlic – 2 cloves.
  • oil – 50 ml
  • parsley, dill – 1 bunch each
  • sour cream – 2-3 tbsp
  • salt, pepper – to taste

Method of preparation:

  1. Wash the zucchini, cut into large pieces, transfer to a blender, and whisk until not pureed.
  2. Put the minced meat in a separate bowl, add the chopped zucchini, egg, garlic, salt, flour, chopped pepper, parsley, dill, and mix thoroughly.
  3. Pour vegetable oil into a preheated frying pan, spoon the pancakes, and fry on both sides until golden brown.

The finished dish is best eaten hot with sour cream and herbs, as well as with fresh vegetables.
