Secrets of zucchini pancakes

  • Grated zucchini should be placed on a sieve to drain the excess juice. Otherwise, you will have to add more flour, and the pancakes will not be as juicy.
  • Do not salt the zucchini at the initial stage and until they are baked. In this case, you will take away excess moisture and the pancakes will not be tender and juicy.
  • To shape the pancakes perfectly, you can use a cooking ring or make one yourself with a plastic bottle.
  • Before putting the zucchini pancakes in the oven, you can sprinkle them with a drop of oil on top. This will give the dish a golden crust.
