Zucchini pancakes: how to make the fastest breakfast
In the morning, you always want to make breakfast very quickly, and it should be not only satisfying, but also tasty and, preferably, healthy. Great options include pancakes with various fillings, vegetable and sweet pancakes, mint and berry pancakes.
Today, FoodOboz editorial team shares a recipe for delicious, fluffy zucchini pancakes that will be a great breakfast in just 10 minutes.
Ingredients:
- Zucchini - 1 pc.
- Kefir - 150 ml
- Flour - 1 cup
- Baking powder - 0.5 tsp
- Eggs - 2 pcs.
- Oil - 2 tbsp
- Salt - 0.5 tsp
- Pepper - to taste
Method of preparation:
- Wash the zucchini, grate on a coarse grater, add eggs, kefir, salt, pepper, and mix.
- Sift the flour, add the baking powder, and mix. Add to the zucchini and mix thoroughly.
- At the very end, add the oil and mix.
- Heat a frying pan, spoon in the dough, and fry them one at a time.
Ready-made pancakes are best eaten hot, with sour cream, salmon, poached egg, herbs, vegetables, and cream cheese.
