Zucchini ketchup without tomatoes: an alternative to the usual sauce

If you want to make ketchup for the winter, but don't have enough tomatoes at home, banal zucchini can help. Combined with tomato paste, they will make an unbeatable base for the sauce.

Food blogger Kateryna Boyko shared the recipe on her Facebook page. According to her, the ketchup is delicious and indistinguishable from the classic version.

How to make ketchup from zucchini.

Ingredients:

  • 1.5 kg of peeled zucchini
  • 0.5 kg of onions
  • 2 tbsp of salt
  • 0.5 liters of tomato paste
  • 0.5-1 tsp of red pepper
  • 1 tbsp of sweet paprika
  • 125 ml of vinegar
  • 125 g of sugar

Method of preparation:

1. Cut the zucchini into 1 by 1 cm cubes, chop the onion into small cubes, add salt and mix well, leave for 1 hour. Then drain all the liquid that has formed and put the pot with zucchini and onions on the fire, bring to a boil and cook (stirring from time to time) for about 45 minutes.

2. Remove from the heat and blend everything with a blender until smooth, add red pepper, paprika, sugar, tomato paste, vinegar, put on fire, bring to a boil and cook over low heat for another 15 minutes (stirring occasionally).

3. Put into sterilized jars and tighten the lids.
