Zucchini ketchup for winter: how to prepare delicious sauce at home
Zucchini can be used to make a variety of appetizers, baked goods, and even spicy ketchup. It is perfectly preserved for the winter and will complement the taste of any meat or fish. To make this preparation, you will need a few more seasonal vegetables.
The idea of making zucchini ketchup for the winter was published on the Instagram page of food blogger Oksana (oksana dorosh rezeptu). Vinegar will be used as a preservative.
Ingredients:
- peeled zucchini - 1.5 kg
- onion - 0.5 kg.
- salt - 2 tbsp
- tomato paste - 0.5 liters
- red pepper - 0.5-1 tsp.
- sweet paprika - 1 tbsp.
- vinegar - 125 ml.
- sugar - 125 g
Method of preparation:
1. Cut the zucchini into 1 by 1 cm cubes.
2. Cut the onion into small cubes.
3. Add salt, mix well, and leave for 1 hour.
4. Then drain off all the liquid and put the pot with the zucchini and onions on fire.
5. Bring to a boil and cook for about 45 minutes, stirring occasionally.
6. Remove from heat and beat with an immersion blender until smooth.
7. Add red pepper, paprika, sugar, tomato paste, and vinegar.
8. Put on fire, bring to a boil and cook over low heat for another 15 minutes, stirring from time to time.
9. Then pour into sterilized jars and close with lids.
