Zucchini caviar without mayonnaise: turns out tastier than store-bought
Pickled zucchini is one of the most popular and delicious appetizers. For example, it can be everyone's favorite zucchini caviar, which can be eaten on its own, as an addition to main dishes, or as a spread. Traditionally, it is prepared with mayonnaise, but you can easily do without it by replacing the ingredient with other spices. It tastes even better than store-bought.
Food blogger Yulia (juli_co.ok) shared a recipe for zucchini caviar without mayonnaise on her Instagram page.
Ingredients for 7 0.5-liter jars
- zucchini - 6 pcs
- tomatoes - 5 pcs
- bitter pepper - 1 pc
- sweet pepper - 4 pcs
- garlic - 6 cloves
- onions - 4 pcs
- carrots - 3 pcs
- vegetable oil - 50 ml
- Swan salt - 1 tbsp + 0.5 tsp (you can replace with 1 tbsp of regular salt)
- pepper - 1 tsp
- paprika - 0.5 tsp
- coriander - 0.5 tsp
- dry garlic - 0.5 tsp
- dry dill - 0.5 tsp
- citric acid - 1 tsp
- sugar - 3 tbsp
- allspice - 8 pcs
Method of preparation:
1. Bake the sweet pepper at 180 degrees for 30 minutes. After that, put the vegetables in a bag, tie it up and leave it to cool completely.
2. Peel the cooled peppers.
3. Cut the zucchini into squares. Add regular and Swan salt. Mix well.
4. Dice the onion. Put it in a preheated frying pan with oil. Transfer the cooked onions to a saucepan.
5. Grate the carrots. Fry in a preheated pan with oil in the same way.
6. Meanwhile, chop the garlic and hot pepper. After two minutes, add them to the carrots. Fry for another 1 minute. Add to the onions.
7. Fry the bell peppers without adding oil. Simmer for about 1-2 minutes. Add to the vegetables.
8. Chop the tomatoes and fry with sugar and Swan salt in a preheated pan with oil. Add to the vegetables.
9. At the very end, fry the zucchini in a preheated frying pan with oil. Add to the vegetables.
10. Add citric acid, 2 tbsp of sugar, and allspice to all the vegetables. Stir to combine. Bring to a boil and then simmer under the lid for 10 minutes. The total cooking time is 40 minutes.
11. Beat the cooked vegetables in a blender. Bring the resulting mass to a boil and cook for 2 minutes.
12. Pour the caviar into sterilized jars and close with lids. Turn the jars upside down and cover with something warm. Leave it until they cool completely.
