Zucchini caviar with mayonnaise for winter: recipe for a tasty and budget appetizer
Zucchini caviar can be cooked in a frying pan, in the oven, or in a saucepan. For an original taste, add mayonnaise to the base in addition to vegetables.

Ingredients:
- 2 kilograms of zucchini
- 0.5 kilograms of onions
- 750 g of carrots
- 180 g of oil
- 250 g of tomato paste
- 200 g of mayonnaise
- 80 ml of 9% vinegar
- 100 g of sugar
- 1 tbsp. rock salt
- 1/2 tbsp. sweet paprika
- 1/2 tsp. ground black pepper
Method of preparation:
1. Wash, peel, clean and cut the zucchini.
2. Peel and chop the onion and carrot into small pieces. Pass all the vegetables through a meat grinder, add oil and mix.
3. Cook the caviar for 1 hour, stirring occasionally. After an hour, remove the zucchini from the heat and add salt, sugar, pepper, sweet paprika, tomato paste and mayonnaise. Stir.
4. After that, put it back on the fire and cook for 1 hour, stirring constantly. Add vinegar in the end and pickle as usual.
