Zucchini caviar with eggplant for the winter: a simple recipe
Zucchini caviar is a very tasty and simple appetizer made with 4-5 vegetables which can be prepared in different ways by adding new ingredients for a bright taste, such as spices, mayonnaise, or garlic. The caviar can be eaten immediately or pickled with vinegar.

Ingredients:
- zucchini - 1 pc.
- onion - 1 pc.
- carrots - 1 pc.
- eggplant - 0.5 pcs.
- tomato - 1 pc.
- bell pepper - 0.5 pcs.
- garlic - 2 cloves.
- vegetable oil - 3 tbsp.
- sugar - 1 tsp.
- salt - 1 tsp.
- pepper - 0.5 tsp.
Method of preparation:
1. Wash the vegetables, cut them into pieces and put them in a baking sleeve.
2. Add oil, sugar, pepper, salt and close the sleeve, mixing everything thoroughly. Make a few punctures in the bag with a toothpick and place the sleeve and bake at 180°C for 1 hour.
3. Put the cooked vegetables in a blender, beat, let cool, and serve.
