Zucchini caviar in a frying pan: cooked with tomato paste and carrots

Summer is the season for delicious, budget-friendly and healthy zucchini, which can be used to make pancakes, stews and caviar. They can also be pickled.

The cook shared a recipe for delicious, spicy zucchini caviar with tomato paste and vinegar on Instagram.

Ingredients:

  • zucchini - 1 pc.
  • carrot - 1 pc.
  • onion - 1 pc.
  • garlic - 2 cloves.
  • tomato sauce - 2 tbsp.
  • sugar - 1 tsp.
  • salt and pepper - to taste
  • vinegar - 1 tsp.

Method of preparation:

1. Fry onions and carrots, add tomato sauce, and mix.

2. Add finely chopped zucchini, garlic, and spices, stir and simmer under the lid for up to 30 minutes.

3. Put the cooked zucchini in a deep bowl, blend, add vinegar and eat.
