Zucchini caviar for winter: prepared quickly and stored perfectly

Zucchini caviar is an ideal budget appetizer. It is very convenient to make it for the winter. To do this, you will need juicy and tasty seasonal vegetables.

Ingredients:

  • zucchini - 2 kg
  • carrots - 1 kg
  • onion - 750 g
  • sugar - 50 g
  • dried paprika (sweet) - 10 g
  • salt - 1 tbsp
  • pepper mix - 0.5 tsp.
  • 9% vinegar - 75 ml
  • medium-sized garlic - 2 heads
  • oil - 200 g
  • tomato paste - 250 g

Method of preparation:

1. Grind zucchini, carrots and onions in a meat grinder.

2. Place the vegetables in a large heavy-bottomed saucepan, add everything except the tomato paste, garlic and vinegar.

3. Cook over moderate heat for 1.5 hours, stirring constantly.

4. Beat the mixture with a hand blender until smooth.

5. Add the garlic, tomato paste and vinegar, cook for another 30-40 minutes under a lid over a low heat, and stir gently.

6. Transfer to clean jars, close with sterile lids, sterilize in water for 20-30 minutes (depends on the size of the jars), and cover.
