Zucchini caviar for the winter: the best recipe
Pickled zucchini is one of the most popular and delicious preservation. For example, everyone's favorite is zucchini caviar, which can be eaten on its own, as an addition to main dishes, or as a spread on bread.
Food blogger Inna (shumak_inna) shared the easiest recipe for pickled zucchini caviar on her Instagram page.
Ingredients:
- zucchini - 1800 g
- onions - 400 g
- carrots - 400 g
- vegetable oil - 250 ml
- tomato paste - 150 g
- sugar - 1.5 tbsp
- paprika - 0.5 tsp.
- pepper - 0.5 tsp.
- vinegar - 1 tbsp.
- salt
Method of preparation:
1. Cut the vegetables into small cubes or grate them.
2. Fry the onions and carrots until soft.
3. Add the zucchini to the vegetables.
4. Add tomato paste, spices, salt, sugar and oil. Mix and simmer under the lid for 1 hour, stirring occasionally.
5. Add vinegar only if you plan to close the caviar in jars with a key.
6. Put the resulting mass into jars. Store in a cold place.
