Zucchini cake with tomatoes and garlic: a recipe for a budget dish for a festive table

Ingredients:
- zucchini - 800 g
- eggs - 3 pcs.
- flour - 5 tbsp (you may need a little more, look at the consistency of the dough, it should be like thick sour cream)
- salt, pepper
- oil for frying
The filling:
- tomatoes
- mayonnaise - 100 g
- sour cream - 100 g
- garlic - 3 cloves.
Method of preparation:
1. Grate the peeled zucchini on a coarse grater, salt, and leave for 10 minutes. Then squeeze out the excess moisture. Add eggs, flour, salt, and pepper to the zucchini and mix. The dough should be like thick sour cream.
2. Grease a frying pan with a little oil and fry the pancakes over medium heat. For 1 pancake, use about 2 tablespoons of batter. Gradually spread it and fry for 3 minutes on each side.
3. For the sauce: mix sour cream, mayonnaise, and garlic. Cut the tomatoes into thin slices.
4. Assemble the cake in layers, brush each pancake with the sauce, and add the tomatoes.
Leave the finished cake in the refrigerator for a few hours!
