If you want to make vegetable cutlets but don't know which vegetables are ideal for this, the answer is simple: zucchini and cabbage. These two vegetables will be the perfect combination, thanks to which the cutlets will turn out to be very juicy.

Ingredients:

  • Flour – 2-3 tbsp.
  • Zucchini – 2 pcs.
  • Potatoes – 1 pc.
  • White cabbage – ½
  • Green onions – 3 pcs.
  • Eggs – 1-2 pcs.
  • Hard cheese – 100 g
  • Oil – 2-3 tbsp
  • Parsley – 0.5 bunch
  • Breadcrumbs – 1 cup
  • Salt and pepper – to taste

Method of preparation:

  1. Wash the vegetables, you don't need to peel the zucchini, just grate it on a coarse grater.
  2. Wash, peel, and grate the potatoes, mix them with the zucchini, salt and pepper, and set aside for 10 minutes to let them juice.
  3. Chop the cabbage, salt and pepper it and let it rest for 10 minutes.
  4. After the time has elapsed, mix all the ingredients without the juice, add eggs, flour, chopped green onions, and mix well.
  5. Form cutlets with your hands, breaded in breadcrumbs, and fry in vegetable oil until cooked.

Serve with potatoes and salads.
