Zucchini adjika with tomato paste: recipe for a spicy appetizer for the winter

Not everyone likes classic zucchini caviar. Therefore, an alternative was invented for it - zucchini adjika. To prepare this appetizer, all vegetables are chopped in a meat grinder, and more hot spices and tomato paste are added. It turns out very tasty and spicy.

Food blogger Yulia (juli_co.ok) shared a recipe for zucchini adjika on her Instagram page.

Ingredients for 6 0.5 liter jars

  • zucchini - 2 kg
  • sweet pepper - 200 g
  • carrots - 200 g
  • garlic - 3 heads
  • tomatoes - 1 kg
  • hot peppers - 3 pcs
  • tomato paste - 140 g
  • oil - 120 ml
  • sugar - 100 g
  • 9% vinegar - 80 ml
  • salt - 2 tbsp.

Method of preparation:

1. Wash and peel all vegetables. Pass them through a medium meat grinder.

2. Squeeze garlic through a press.

3. Put the vegetables in a saucepan, bring to a boil and simmer for 20 minutes over high heat.

4. Add all the spices except vinegar and garlic. Boil for another 10 minutes.

5. Add vinegar and garlic. Boil for another 5 minutes.

6. Put the adjika in sterilized jars and close with lids.
