Zucchini pancakes are a great option for breakfast or a snack. The dish is very light and, at the same time, nutritious. But in addition to the classic vegetables, it is delicious to add spinach.
The idea of cooking hearty zucchini pancakes with spinach was published on the Instagram page of nutritionist Kateryna Cherkaska. They can be served with sour cream.
Ingredients:
- zucchini - 100 g
- spinach - 30 g
- egg -1 pc.
- milk - 40 g
- whole grain/oatmeal/rice flour - 40 g
- baking powder - 1/4 tsp.
- sun-dried tomatoes - 20 g
- herbs and spices - to taste
Method of preparation:
1. Beat spinach, egg and milk in a blender.
2. Grate the zucchini.
3. Squeeze out the liquid.
4. Mix the ingredients.
5. Grease the frying pan with a drop of oil.
6. Fry the pancakes on both sides until cooked.
7. You can sprinkle them with parmesan, thick yogurt and vegetables.
