Young potatoes with mint: a refreshing summer dish
If you want to make delicious young potatoes, all you need to do is boil or roast them and add butter, spices, garlic, rosemary, or dill.
Culinary expert Yevhen Klopotenko shared an unusual recipe for delicious young potatoes with mint on his website.
Ingredients:
- young potatoes - 800 g
- green onions - 5 pcs.
- mint - 3 sprigs
- homemade mayonnaise - 50 g
- lemon - 1/2 pc.
- grain mustard - 1 tsp.
- salt - to taste
Method of preparation:
1. Wash the potatoes thoroughly. Do not cut them if they are small.
2. Put the potatoes in a saucepan, cover with water, add salt, and cook over medium heat for 20-25 minutes.
3. Drain and let them cool slightly.
4. Wash the onion with the mint and chop finely.
5. Put the cooked potatoes in a bowl, sprinkle with herbs, add homemade mayonnaise, mustard and squeeze the juice of half a lemon. Season with salt and mix.
