Eggplants can be used not only for salads, appetizers, caviar, and casseroles, but they can also be tasty canned with garlic, sauces, onions, and vegetables.
The cook shared a recipe for delicious pickled eggplants with frying on Instagram.
Ingredients:
- 2 eggplants
- 1 tsp of salt
- 2 pieces of bell pepper
- 1 large carrot
- 1 large onion
- 3 cloves of garlic
For the marinade:
- 50 ml of water
- 50 ml of vinegar
- 1/2 tsp salt
- 2 tbsp sugar
Method of preparation:
1. Cut the eggplant into slices, salt and set aside for 30 minutes.
2. Fry the chopped peppers, carrots and onions until soft.
3. Put the fried vegetables in a deep bowl. Squeeze the eggplants out of the juice and fry them separately in vegetable oil. Add the eggplant to the vegetables and garlic.
3. Marinade: mix all the ingredients for the marinade.
4. Pour the marinade over the vegetables, stir and leave for 1 hour.
