Yeast-free pizza: what you can replace an important ingredient with
Traditionally, yeast is added to pizza dough to make it tender and fluffy. However, this dish is high in calories, so if you care about your figure but can't give up your favorite pastries, you can use another technology.
The idea of making yeast-free pizza was published on the Instagram page of Yuliana (uliana_ilkiv_). According to this recipe, mineral water and baking soda are used instead of yeast. This mixture helps to make the dough fluffy. It will also rise well.
Ingredients for the dough:
- wheat flour - 300 g
- mineral water - 200 ml
- olive oil - 15 ml
- baking soda - 8 g
- lemon juice - 10 g
- salt - a pinch
Ingredients for the filling:
- zucchini - 1 pc
- eggplant -1 pc
- mushrooms - 5-6 pcs
- bell pepper - 1 pc
- tomatoes - 1-2 pcs
- hard cheese (optional)
Ingredients for the sauce:
- tomato - 1 pc
- onion - 1 pc
- paprika - 1 tsp
- olive oil - 1.5 tbsp
- salt - 0.5 tsp
- ground black pepper
- mixture of Italian herbs - 1 tsp
- dried parsley - 1 tsp (or other herbs)
Method of preparation:
1. Sift the dry ingredients.
2. Mix mineral water with oil and lemon juice.
3. Combine the dry ingredients with the liquid ones and knead the dough. The dough should be soft but not sticky.
4. For the filling, cut the vegetables (zucchini, eggplant, tomato, pepper) into rings, salt, fry in a non-stick pan or grill and add spices to taste.
5. For the sauce, beat all ingredients in a blender until smooth.
6. Roll out the dough, spread the sauce, add the filling, and cover with cheese.
7. Bake at 180 degrees for 20-25 minutes.
