Without mayonnaise: healthy Mimosa salad in a new way
Mimosa salad is one of the most budget-friendly, easy-to-prepare, and hearty salads that can be made at any time of the year. The salad is prepared with vegetables, canned food, mayonnaise, and cheese. However, by replacing just one ingredient, the salad can have a completely different flavor.
Culinary expert Yevhen Klopotenko shared an interesting recipe for a delicious Mimosa salad without mayonnaise on his website.
Ingredients:
- potatoes - 2-3 pcs.
- eggs - 2 pcs
- carrots - 1 pc
- canned tuna - 150 g
- onion - 1 pc
- sunflower or olive oil - 3 tbsp
- breadcrumbs - 1 tbsp
- fennel or dill - 2 sprigs
- salt, pepper - to taste
Method of preparation:
1. Preheat the oven.
2. Wash the vegetables, wrap them in foil and bake at 180 C for 30-40 minutes.
3. Allow the cooked vegetables to cool, peel and dice the potatoes and grate the carrots on a coarse grater.
4. Cut the onion into half rings and be sure to pour boiling water over it.
5. Boil the eggs, cool in cold water, peel and cut into 4 pieces.
6. Assemble the salad: put chopped potatoes, grated carrots, onions, tuna, and dill or fennel sprigs on a plate. Top with eggs.
7. Season with salt and pepper, add coarse breadcrumbs and drizzle with oil.
