Food blogger Juliia Mykulych (yuliia_mikulich) shared a recipe for frying pan cookies on her Instagram page.
Ingredients for 20 pieces
- flour – 250 g
- sugar – 80 g
- vanilla sugar – 2 tsp
- baking powder – 2 tsp
- salt
- nutmeg
- cinnamon – 1/2-1 tsp
- butter – 120 g
- raisins (or dried currants/cranberries) – 40 g
- zest of a small lime/lemon
- eggs – 1 pc
Method of preparation:
1. Combine flour, sugar, vanilla sugar, baking powder, salt, nutmeg, cinnamon. Mix well.
2. Cut the cold butter into small pieces and add to the flour. Grind to a state of crumbs.
3. Add raisins and zest to the crumbs and mix.
4. Add the egg and knead a soft, non-sticky dough. If the dough is dry, add a little milk, if it is sticky, add flour. Divide the dough into 20 equal balls. It is recommended to put half of the balls in the refrigerator while you are preparing the first batch of cookies.
5. Roll out each ball 5 mm thick.
6. Heat a frying pan, and grease it with a thin layer of oil. Put the biscuits in the pan. Fry over low heat for 5 minutes on each side.
7. Cool and store the finished cookies in a sealed container.
