With mushrooms and herbs: how to make thick processed cheese at home
It is not difficult to make tender and soft processed cheese at home. And if possible, it is best to use homemade cottage cheese and sour cream for cooking. They have a high fat content and processed cheese will be much tastier. You can use various additions to the dish if you wish: herbs, mushrooms, and your favorite seasonings.

Ingredients:
- cottage cheese – 500 g
- sour cream 20-30% – 2 tbsp.
- eggs – 2 pcs.
- salt – 1 tsp.
- soda –1 tsp.
- dry garlic – 0.5 tsp.
- mushrooms – 200 g
- pepper
- herbs
Method of preparation:
1. Peel and chop the mushrooms. Put on the fire and simmer until the excess liquid evaporates.
2. Add sour cream, eggs, salt, baking soda, and pepper to the cottage cheese. Beat with a blender until smooth.
3. Put the resulting curd mass in a water bath. Cook for about 10-15 minutes, stirring constantly. When the cheese is ready, it will run off the spatula in pieces.
4. Add mushrooms, chopped herbs, and garlic to the hot cheese. Stir to combine. Store in a closed container in the refrigerator.
