Sponge cakes can be both a base for delicious desserts and a standalone dessert. To make it fluffy, you need to follow the exact proportions when cooking.

A chef shared a recipe for a delicious, fluffy and airy sponge cake with strawberry soaking and delicate cream on Instagram.

Ingredients:

  • soft butter - 160 g
  • sugar - 160 g (or 150 regular and 10 vanilla)
  • eggs - 3 pcs.
  • wheat flour - 160 g
  • baking powder - 1/2 tsp.
  • mascarpone - 250 g
  • fatty cream - 50 g
  • powdered sugar - 50 g
  • vanilla
  • strawberries - 150 g + for decoration
  • sugar - 20 g

Method of preparation:

1. For the sponge cake, beat butter with the sugar and vanilla until white. Add the eggs one by one and beat again. The mass should be airy. Add flour and baking powder and mix until smooth.

2. Bake in a greased baking dish at 180 C for about 30-40 minutes (check with a toothpick). Let the sponge cake cool.

3. Peel the strawberries and add 20 g of sugar and cook until they release their juice. Cook until soft, and then mash with a fork. Let it cool down.

4. Whip cold cream with mascarpone and add powdered sugar and vanilla.

5. Soak the cold sponge cake with strawberry jam and let stand for 10-15 minutes. Spread cold cream on top and garnish with strawberries!
