Why soak herring in milk
Herring is not only tasty but also a very healthy and nutritious fish that contains a lot of omega-6 and omega-3 polyunsaturated fatty acids. It is very important that herring has the same amount of healthy fatty acids as salmon and trout. You can cook many different dishes with it, from delicious salads to pates and forshmak.
It's worth noting that this fish has a rather specific smell that not everyone likes. But it can be easily eliminated. All you need to do is add some ingredients, such as milk, advises chef Yevhen Klopotenko on his website.
Soaking herring in milk helps to remove excess salt from the herring and makes the fish taste more delicate.
Klopotenko recommends soaking herring in milk or a 1:1 mixture of milk and water.
"If you don't have milk, don't be upset and just soak the fish in clean water. Remember that soaked fish should be stored in the refrigerator to prevent it from spoiling," the chef advises.
Soft forshmak with cheese
Ingredients:
- lightly salted herring fillet - 2 pcs
- cheese - 30 g
- chicken egg - 1 pc
- onion - 20 g
- olive oil - 2 tbsp
- freshly ground pepper - to taste
Method of preparation:
1. Remove the bones from the herring, chop and beat it in a blender.
2. Boil the egg and grate it.
3. Peel and finely chop the onion.
4. Put all the ingredients in a blender, add the cheese and beat until smooth.
5. Add olive oil and mix.
