The main reasons:
- Improper sterilization
This applies to both containers and lids. For canning, you should only choose whole and new jars that are free of any chips. The same goes for the lids: it is not recommended to reuse them even if they have not been badly damaged after the previous preservation. And you shouldn't use lids that are too old. The rubber band that secures the lid to the jar may lose its elasticity. This creates an additional opportunity for air to enter the preservation.
- Improper preparation of ingredients
Before preserving, you need to wash not only the vegetables themselves but also additional ingredients: various leaves of berries, fruits, and vegetables. It is also advised to cut off the tails of cucumbers before cooking as they can contain a large number of microorganisms that can multiply in the future.
What to do if a jar unseals
In this case, the jar of cucumbers can be given a "second life", but only after additional heat treatment. To do this, boil the cucumber brine at least twice or just make a fresh one. You also need to wash the vegetables and other ingredients again. It is also advised to add a few tablespoons of vinegar to the jar before closing it.
