Ingredients:
- pork breast - 600 g
- onion husks - 2 handfuls
- water - 1.5 liters
- bay leaves - 2-3 pieces
- salt - 100 g
- black peppercorns - 10-15 pcs
- allspice - 3-5 pcs
- garlic - 5 cloves
- spices
Method of preparation:
1. Put the onion husks in a colander and rinse under running water. Rinse the pork breast too.
2. Pour water into a large saucepan and bring to a boil.
3. Add salt and let it dissolve completely. Add the husks, bay leaves, peppercorns and allspice. Stir to combine.
4. Add the breast. Water should completely cover the meat. Bring to a boil and simmer for 30-40 minutes over low heat. During the cooking process, periodically turn the breast over so that it is evenly cooked.
5. Allow the cooked breast to cool completely in the pan. Then put in the refrigerator and leave for 8 hours.
6. Remove the breast from the brine, pat dry with a paper towel, and rub with chopped garlic and spices.
7. Wrap the breast in a paper towel and put it in the refrigerator for another 2 hours.
